Piadina is a thin Italian unleavened flatbread, typically prepared in the Romagna region.
It is usually made with white flour, lard or olive oil, salt, and water. After cooking, the piadina is folded and filled with a variety of savoury or sweet fillings (ham, cheese, nutella, etc.).
Nowadays, very good piadinas can also be enjoyed in Montreal and Toronto:
In Montreal: at Romagna Caffé, at Lunchboxcuisinette, or at L’Artisan Piadineria.
In Toronto: at my friend Gabriele‘s wonderful restaurant Paganelli’s.
