During our last trip to Italy, we had a very interesting meeting at the office of the founder and President of Slow Food, Carlo Petrini, at the headquarters of the University of Gastronomic Sciences (UNISG) of Pollenzo (Bra). Those who have been following us for years know that our collaborator Éloïse Vincent graduated with the highest GPA in this school.
Our readers also know that we share the same values as Slow Food – food sovereignty, supply chain ethics and product quality. Indeed the main goal of this movement founded in 1986 in response to the emergence of “fast food” and culinary homogenization, is to educate citizens around the world on the importance of eating responsibly. In practice it means favoring the production and consumption of food that is very tasty, yet respectful of food typologies, ecosystems and biodiversity, while at the same time ensuring adequate pricing and treatment of the producers.
