Braised Brussels Sprouts with Bacon

Ingredients

2 slices bacon, chopped 40 g
2 tbsp olive oil 30 mL
14 Brussels sprouts, cut in half or quartered 360 g
1 cup chicken broth 250 mL
2 tsp whole-grain mustard 10 g
1 pinch salt [optional] 0.2 g
ground pepper to taste [optional]

Method

  1. Chop the bacon, put it in a nonstick pan, then fry until the bacon is crisp. Set the bacon aside on a paper towel.
  2. Add the oil then heat over medium heat. Add the sprouts and cook 2 min, with stirring. Pour in the broth, add the mustard, cover, and simmer until the sprouts are almost tender, about 7 min. Uncover and simmer until the broth evaporates, about 7 min.
  3. Put the bacon back into the pan and cook 1 min with stirring. Add salt and pepper then serve.
