Outside its native Hungary, where it is known as «gulyás» and is served as a hearty thick soup, goulash [pr. GOO-lahsh] is a stew made with beef or other meat and vegetables, flavoured with lots of very fresh sweet or spicy Hungarian paprika, giving it a pungent aroma.

Best goulash I've tasted!
Definitely would make again. Next time though, I will add the peppers later as they cooked down to practically nothing. I added sauteed mushrooms to the recipe as well and about 2 tbsp of corn starch for a thicker sauce.
I substituted Elk meat for the beef and it worked great!
