A sorbet made with orange, lemon, and grapefruit juice.

The lemon and grapefruit juice add a hint of tartness to the sweetness of the orange juice in this sorbet. The colour will be bright-red if blood oranges are used.

Ingredients

1 1/2 cup sugar 300 g
1 cup water 250 mL
1/8 tsp salt 0.4 g
1 1/3 cup orange juice, freshly squeezed 3 3/4 oranges
2/3 cup grapefruit juice, freshly squeezed 1 grapefruit
1 tbsp lemon juice, freshly squeezed 1/2 lemon
2 egg whites 4 tbsp

Before you start

A hand-held or stand mixer will make things easier for this recipe.

Egg whites previously set aside in the refrigerator from another preparation may be used in this recipe.

Method

  1. Put a metal or glass bowl (or tray) into the freezer so that it will be cold when filling it with the sorbet mixture.
  2. Add the sugar, water, and salt to a saucepan. Bring to a boil then cook over low heat, with occasional stirring, 4-5 min, until the mixture becomes a clear syrup. Let it cool down in the refrigerator about 20 min.
  3. Juice the oranges, grapefruit, and lemon, then set the juice aside.
  4. Beat the egg white(s) in a bowl using an electric mixer until stiff peaks are formed. Pour in the cooled syrup slowly, with stirring, then add the citrus juice. Mix well, then transfer the mixture to the prepared bowl, cover and put it in the freezer.
  5. After about 3 h, take the bowl out of the freezer, stir the mixture using a whisk, then return the bowl to the freezer. Repeat the same stirring operation after an additional 2 h in the freezer. A third stirring step may be needed later : It normally takes 12 hours until the proper consistency is reached.
  6. Remove the sorbet from the freezer and let it stand at room temperature 10-15 min before serving, so that it will soften slightly.

Observations

After 7-10 days in the freezer, the sorbet will crystallize. In order to obtain a smooth consistency again, you may take the sorbet out of the freezer, bring it to room temperature, then repeat the stirring and freezing operations.

Way way way too sweet. This either needs half the quantity of sugar, twice the quantity of fruit juice or another sweetener altogether like honey or maple syrup. I could barely taste the citrus the sugar was so overpowering. I'm willing to try this again. I used Red grapefruit and the color was still barely golden and yet I used the exact quantities mentioned.
