Ingredients

1/2 cup brown rice flour 90 g
2 tsp paprika 6 g
3 cloves garlic, minced
1 pinch salt [optional] 0.2 g
ground pepper to taste [optional]
8 chicken thighs, boneless, skinless, or drumsticks 500 g
1 cup chicken broth, low-sodium 250 mL
1/2 cup orange juice 125 mL
3/4 cup red wine 190 mL
1 1/2 tbsp gingerroot, grated 20 g
1 tbsp sucanat 14 g

Method

  1. In a bowl, mix flour, paprika, garlic, salt and pepper. Coat chicken with this preparation.
  2. Pour broth, orange juice and red wine in a saucepan. Add the chicken and the remaining ingredients.
  3. Simmer over low heat for 1 ½ hours or until the chicken is well done.
  4. Serve.
