Fruit Salad with Limoncello

Ingredients

2 peaches, yellow, or nectarines 300 g
2 kiwis 180 g
3/4 cup blueberries 100 g
2/3 cup strawberries 100 g
1 tbsp sugar 12 g
4 tbsp Limoncello (lemon liqueur) 60 mL
4 tbsp fresh mint, finely chopped 12 g

Method

  1. Peel the fruit then cut them into bite size pieces. Put the pieces in a salad bowl, then add the sugar and Limoncello. Toss to combine. Set the fruit salad aside 15 min at room temperature.
  2. Sprinkle with mint, toss, then portion out to individual cups.
